Tortillas

One night this week I decided we were going to have breakfast tacos for dinner. Who doesn't love breakfast for dinner? And the best part? Home made tortillas hot off the griddle.

Level: Easy (except getting them round. Doh!)
Prep time: 5 min
Cook time: 1 min

Recipe: 
2 C tortilla flour
1/2 C warm water

Note: We live in southern Texas where getting Hispanic ingredients is super easy. I have no idea if this is available where others might shop.

I keep the open bag of tortilla flour in a zippered bag. 
 Boyz mixing the dough, fresh out of the shower and in big T's to sleep in. Of course they ended up a bit 'floury' but not too bad. They look so intense!
 Once the dough is mixed up, turn it out onto a floured surface and kneed until dough is smooth and elastic. Add flour as needed to keep dough from sticking. Cover with plastic wrap until ready to make tortillas. Then divide into 12 equal portions. Each will make 1 6-inch tortilla. 
 Roll each piece into a 6-inch circle (or any shape they can achieve)
Fry on very hot, dry skillet for about 30 seconds a side or until slight browning occurs. 
 
One way we really enjoy these, especially if they end up odd/thick shapes is with a bit of butter and cinnamon/sugar as a dessert. They store for a few days in the fridge, but are never as good as they are hot off the griddle.

  1. I didn't realize how easy they were to make. I will have to try that. We have a Latino flavor aisle at our grocery store, so I will have to look for that! I love tortillas, so I am thinking fresh off the griddle...how can you go wrong???
